What is Valentine’s Day without chocolate? That’s what I recently explained to my daughter when we embarked on “The Great Valentine’s Fudge Experiment” last week. I wanted us to make a chocolate confection that was easy to create and had less sugar than your average candy.
We grabbed the Cuisinart and went to town. And oh was it an experiment!! It was a bit messy at times, but we all had a blast making this fudge together.
Ingredients:
1 cup peanut butter
¼ cup cocoa or carob powder
¼ cup mashed banana
2 tsp. vanilla
4 – 5 walnuts (optional)
Cinnamon and cocoa powder (optional)
• Add the first four (five if you add the walnuts) ingredients to a Cuisinart or a bowl. Mix until smooth.
• Mix cinnamon and cocoa powder together in a bowl.
• Roll fudge mixture into balls and roll in the cinnamon and cocoa.
• Place on wax paper in a Tupperware container and store in the fridge for at least two hours (preferably longer).
The best part about this recipe is that you can play around with it and have a little fun. Throw in some coconut, roll in coconut, use almond butter instead of peanut butter, roll in crushed walnuts.
